How do I create maps to put in travel guides?

I am creating custom travel guides for clients and would like to create small maps to include in these guides--5x7 size maps of specific locations around the world. Like those that you see in Fodor's, Frommers, and other such guides. I want to be able to create walking tour maps, maps that have major tourist spots, etc.
